A scientific review conducted by researchers from the University of Chicago showed that excessive consumption of red meat may cause chronic diseases and lead to deteriorating health.
Researchers analyzed data on ancient human diets, modern health research, and the molecular mechanisms by which meat affects the body. They noted that red meat was important for energy and fat for our ancient ancestors, but the quantities and patterns of its consumption in the modern era have become very different compared to the ancient human diet, so it has become necessary to know its effects on health.
The results of the data analysis showed that regular consumption of red meat, especially processed meat, is associated with an increased risk of cardiovascular disease, type 2 diabetes, colon cancer, and premature death.
During their study, scientists focused particularly on the Neu5Gc molecule found in red meat, which the human body cannot produce naturally. It was found that this molecule accumulates in tissues after consuming this meat and stimulates chronic inflammation.
The researchers stressed that the study does not call for a complete abstinence from meat, but rather for a reconsideration of modern dietary habits, taking into account that the current level of meat consumption far exceeds what humans have been accustomed to throughout the stages of evolution.
