The press office of the Russian Federal Research Center in Nutrition and Biotechnology stated that scientists at the center have developed a new type of bread that promotes weight loss.
The product contains a mixture of ingredients, most notably whole wheat flour, green buckwheat flour (unsteamed), wheat gluten, oat bran rich in beta-glucan, instant dry yeast, deodorized refined sunflower oil, ascorbic acid (E300), barley extract, sunflower protein concentrate with a protein content of no less than 80%, in addition to chlorogenic acids, sunflower extract, salt, and water.
“Under the supervision of Alla Kochetkova, a member of the Russian Academy of Sciences, we have developed a recipe and technology for producing specialized baked goods aimed at helping correct carbohydrate and fat metabolism disorders in people with metabolic syndrome,” said Dr. Yulia Frolova, a researcher at the Laboratory of Food Biotechnology and Specialty Products.
She added that high-protein diets contribute to reducing total body fat and abdominal fat, lower the risk of cardiovascular disease in overweight individuals, and help improve clinical and metabolic control in patients with type 2 diabetes.
She noted that dietary fiber contributes to improving carbohydrate and fat metabolism, while phenolic acids have antioxidant and anti-inflammatory properties, as well as lipid and blood sugar-lowering effects, which may help reduce diabetes complications.
Frolova added: "Therefore, we created this bread, rich in these ingredients, to be part of an integrated nutrition program designed for overweight and obese people."
