When you heat milk, the fat and protein particles in it begin to separate. The fat and protein in milk are lighter than water, so as they heat up, they rise to the top and solidify. As the temperature rises, the fat and protein combine to form a layer of thick cream on the milk's surface.

3. Steam pressure and foam storm
As the milk heats, the water in the milk tries to rise, turning into steam, but the thick layer of cream on top prevents it from escaping. The steam constantly forming below pushes the layer of cream upward. This causes tiny bubbles to gather beneath the cream, forming foam, and the pressure begins to increase. This pressure and foam push the layer of cream upward, causing the milk to spill out of the container.
