What is kefir?

It is prepared by adding "kefir grains," live cultures of bacteria and yeasts, to animal or plant milk. These microorganisms ferment lactose into lactic acid, giving kefir its sour flavor and liquid, yogurt-like consistency. Kefir comes in a variety of forms, including milk kefir (from cow or goat), water kefir (from sweetened water), and coconut kefir, making it suitable for vegans and those with lactose intolerance.
