In defiance of traditional dietary recommendations, researchers have found that regular consumption of full-fat dairy products is safe and does not negatively affect health.

The new Canadian study, led by Professor Harvey Anderson of the University of Toronto and published in The Journal of Nutrition, followed 74 overweight or obese adults for 12 weeks, dividing them into three dietary groups: a group that followed a calorie-restricted, low-dairy diet, a group that followed a balanced diet with three daily servings of full-fat dairy, and a third group that followed an unrestricted diet with three daily servings as well.

After the trial concluded, researchers found no statistically significant differences between the groups in weight gain, body composition, cholesterol and lipid levels, or insulin resistance. This suggests that consuming three servings of full-fat dairy daily does not cause the negative effects that dietary recommendations have long warned against. In fact, participants who consumed more dairy showed significant improvements in blood pressure and increased their intake of calcium, protein, and vitamin D—all essential nutrients for bone health and a strong immune system.

This discovery comes at a time when dietary recommendations in many countries have been urging the selection of fat-free or low-fat dairy products, due to fears of saturated fats linked to high cholesterol and heart disease.

But Professor Anderson emphasizes that human evidence has not supported these concerns, as many studies have found no link between full-fat dairy and harmful health outcomes, and some research has even linked it to protective and positive effects.

This discrepancy stems from the so-called "Dairy Matrix Hypothesis," which suggests that the physical structure of dairy products, where fats are linked to casein and whey proteins (the two main proteins in milk) and other nutrients in an integrated matrix, allows these elements to be delivered to the body gradually, resulting in different health effects than those that saturated fats alone might suggest. In other words, the health impact of food depends not only on the quantity of any one component but also on how all its components interact.

These findings are particularly important for older adults who may find it difficult to meet their protein and nutrient needs as they age and their energy requirements decline. Full-fat dairy products offer them a practical option that is rich in energy and protein without increasing the risk of diabetes or other chronic diseases. The researchers advocate for a nutritional approach that considers whole foods rather than focusing on their individual components.

Professor Anderson concludes his message to consumers with a simple sentence: "Keep it simple, eat a variety of foods, and don't overdo anything."
