Nutritionist Olga Redina pointed out the importance of eating leafy green vegetables when blood sugar levels are high.
According to her, regularly eating leafy green vegeta bles helps fight insulin resistance and atherosclerosis thanks to their high content of soluble fiber, which slows down glucose absorption and removes excess cholesterol from the body.
The expert notes that watercress helps the liver process estrogen, spinach is rich in magnesium, an essential element for insulin sensitivity, and parsley protects blood vessels thanks to vitamin K. Cabbage lowers triglyceride levels, and dill essential oil helps relax the smooth muscles of blood vessels and regulate blood pressure.
According to her, to reap the full benefits, you should consume at least 100 grams of fresh leafy greens daily, equivalent to two tightly packed cups. She recommends adding leafy greens to every main meal, and preferably, to improve blood sugar control, to eat them before or with carbohydrate-rich meals.
According to her, this method allows the fibers to react with glucose first and immediately slow its entry into the bloodstream.
