Ingredients

2 tablespoons olive oil

2 cups chopped onion1 cup chopped carrot1 cup chopped celery1 cup green bell pepper4 large cloves garlic, minced8 cups shredded cabbage1 tablespoon tomato paste1 tablespoon chopped chipotle pepper in adobo sauce1 teaspoon ground cumin1/2 teaspoon ground coriander4 cups low-sodium vegetable broth or chicken broth4 cups water15-ounce can low-sodium black beans, rinsed3/4 teaspoon salt1/2 cup chopped fresh cilantro, plus more for serving2 tablespoons lime juiceCrumbled cheddar cheese, nonfat plain Greek yogurt and/or diced avocado for garnish.DirectionsHeat the oil in a large (8-quart or larger) soup pot over medium heat. Add the onion, carrot, celery, poblano or green bell pepper and garlic and cook, stirring frequently, until tender, 10 to 12 minutes.Add the cabbage and cook, stirring occasionally, until slightly softened, about 10 minutes. Add the tomato paste, chipotle, cumin and coriander and cook, stirring often, for 1 minute more.Add the broth, water, beans and salt. Cover and bring to a boil over high heat. Reduce heat and simmer, partially covered, until the vegetables are tender, about 10 minutes. Remove from heat and stir in the cilantro and lime juice.
