Nutrients magazine noted that a study conducted by scientists from Nicolaus Copernicus University in Poland found that purple fruits and vegetables such as purple berries, blackcurrants, purple sweet potatoes, and purple cabbage can boost recovery after physical activity and protect cells from aging.
The positive effects of these foods are due to their content of anthocyanins, the natural pigments that give plants their purple color. These pigments act as antioxidants, reduce inflammation, and support cardiovascular health.
The researchers explained that anthocyanins affect key cellular pathways such as Nrf2 and NF-κB, helping the body resist oxidative stress, the primary cause of fatigue and cellular damage after intense exercise.
The study indicated that people who consume foods rich in anthocyanins show faster adaptation to physical activity and greater resistance to chronic diseases.
Although the absorption rate of anthocyanins in the body is low, with only about 2% reaching cells, scientists are exploring ways to improve effectiveness by developing encapsulated forms and nanoemulsions. It is also recommended to combine purple foods with vitamin C to enhance absorption.
The study authors emphasize that regularly including purple fruits and vegetables in the diet can be a simple and safe way to boost health, increase endurance, and slow the aging process.
