Scientists have refuted traditional perceptions about the harms of animal fats , pointing out that consuming fat within the recommended percentage (25% of the energy value of the diet) improves metabolism by regulating the balance of fat tissues.

Chinese experts faced a paradox: despite recommendations to replace animal fats with vegetable fats, obesity rates continued to rise. Chinese nutritionists recommend consuming only 25-30 grams of vegetable oil daily and avoiding fatty foods of animal origin.
Researchers have confirmed that a traditional diet rich in meat and animal fats, including pork and lard, is associated with a lower prevalence of obesity and diabetes compared to a plant-based diet. The scientists conducted experiments on mice.
The experiment lasted 24 weeks, during which the mice received 25% of their calories from fat. It was found that tallow reduced fat accumulation more effectively than vegetable oils, due to its increased levels of torocholic acid, which improves fat absorption and reduces inflammation.
It has also been observed that fat is rich in beneficial fatty acids that increase the body's sensitivity to insulin and help control blood sugar levels. However, the harmful effects of excessive fat consumption have not been ruled out , as demonstrated by a study on mice published last August by Vietnamese scientists.
